Yes, you can talk from 9pm to 6:59am for free. If you want free minutes from 7pm to 6:59am it costs $5 extra dollars a month, you can call customer service and add it to your existing plan.

Yes, Cingular's Night and Weekend hours on standard plans run from 9pm to 5:59am, any call that is strictly in those hours will be N&W, and would thus be free if your plan includes Unlimited N&W minutes.

Also, in most areas, if you start a call at 8:59pm and continue the call into Nights/Weekends, it will split--the only exceptions are in Illinois, Wisconsin, Michigan, Ohio, and parts of Pennsylvania, Indiana and Texas (in those cases, where the call starts is where it's billed--if you live there MAKE SURE your phone says 9:00pm before you start a long call.)

If your plan has unlimited nights and weekends then your outgoing calls and incomings calls from 9:01 pm to 7:00 am Mondays to Fridays are free and won't use your minutes. Then your weekends are free all day.

Yes, i believe you can talk all the way till the morning, i forget what time in the morning, i think its 6 or 7am.
