The soft tissues between the bones and mostly in the spine, compress, loosing their sponginess.

The spine might curve as well, adding to the effect.

The wrinkled skin and shrunken appearance is mainly because of changes in the muscle, skin and bone. As one's age increases there is a lot of change in many tissues including connective tissue (like muscles, bones, etc.) and so the elasticity of the youth is lost. There are many root causes for this to happen.This is a big research problem called "Aging". What factors cause aging ?... There are many identified causes (oxidative stress, gradual changes to DNA, etc.) and many to be identified.

Due to osteoporosis (loss of bone) in the spine, the vertebral bodies get crushed down; also the discs between are less plump.
