All levels of professional baseball (major, minor, and independent leagues) use wooden bats.

Colleges and lower levels often (but not always) allow the use of metal bats. There are a couple major reasons: (1) Metal bats last longer, and are cheaper in the long run, and (2) Metal bats are often lighter for their size, allowing a batter to control his swing better; and (3) some metal bats have a spring-like effect on hits, allowing batters to hit the ball harder and farther.

In professional ball, it is point #3 that is the biggest reason metal bats are banned: the power of a metal-bat hit by someone like, say, Prince Fielder would be near impossible to field and very dangerous for fielders to try to catch.

They don't...college uses metal...no professional league uses metal bats...college uses metal bats because they are allowed to...metal bats provide more power than wooden bats and they are usually a lot lighter so you can have quicker bat speed which increases the power even more (can you imagine David Ortiz using a metal bat). Since college rules allow for metal bats the players do use them. There have been discussions about changing from metal to wooden in college because of injuries (from the ball coming off the bat so fast and hitting the pitcher) and because players will need to switch to wooden if they go professional but they have not changed yet.

College uses metal bats, and so does high school. But all levels of professional ball, starting with Rookie League, do use wooden bats.

college uses metal bats because they last forever and they cannot afford to supply their players with an endless supply of wooden bats that break very easily.

Organized baseball does not use metal bats.
