..... or do they have to be dried or to lie dormant for some time first?

No, parsley seeds cannot be planted immediately after being taken from a plant.

First, they DO need to dry first.

Second, the conditions must be "Right" for them to sprout.

Parsley is BEST started "fresh" each spring, either from transplants or seeds. They need to be started in EARLY spring. Soak seeds for 24 hours before planting. Even after soaking, they may not sprout for weeks. The old wives tale is that parsley seeds have to go to the Devil and back before they sprout!!! Usual time from sowing to sprout is 28 days.

You can SAVE the seeds that you have collected to sow next spring.

While parsley is biennial, during the second spring the plants ONLY objective is to BLOOM and set seed. There is not much in the way of leaves for cooking. The plant also dies soon after blooming.

When parsley re-seeds itself naturally, the seeds drop after they have dried. Let the seeds dry, then plant them. They may not come up immediately, or at all this this year. Some will sprout next year.

My suggestion is to save some of the seeds for planting in the spring, and sow some of them as soon as they're dried.

Probably since parsley tends to reseed itself. Also, don't dig up your spent parsley yet because Parsley is a biennial and will grow for two seasons.
