One of my favorite recordings, and I believe the best to this day, is a recording of "Der Rosenkavalier" with Herbert von Karajan and Elizabeth Schwarzkopf as the Marshallin. I believe that Anneliese Rothenberger and Teresa Stich-Randall are in it too. I think it was recorded in the 50s, but it's been remastered, and a wonderful recording.
A lot of the opera recordings with Callas, di Stefano, del Monaco, Renata Scotto, Franco Corelli, etc. recorded with the La Scala Orchestra and Tullio Serafin from the 50s and 60s are also the best ever produced.
Good luck with your search!

no one gave you any new ones .... well Lakme with Natalie Dessay ... Ariadne auf Naxos with Deborah Voigt, Ben Heppner for La Boheme critics still consider the Victoria de los Angeles Jussi Bjoerling the best but my favorite is Renata Tebaldi and Carlo Bergonzi .... Samson et Dalila with Rita Gorr and Jon Vickers (his voice has a nasty edge to it but still the greatest interpretation) ... Norma with Maria Callas but make sure it was recorded between 1950 and 1953 while her voice was still good shape .... now this will get some nasty reactions because my favorite Tosca is Zinka Milanov but it is in older style you don't see on stage anymore but if its your only Tosca i would get the Mirella Freni, Pavarotti and Sherrill Milnes better singing than the acclaimed Callas recording and NO ONE sang evil better than Milnes

Gotta love anything by Marie Callas. I think Italian operas are the best.
