As long as you aren't redistributing the music that you download they probably aren't going to do anything even if they do happen to stumble across your one computer on a network of millions. Don't stress over it.

You can't. And it isn't the recording industry spying it's the FBI. Piracy is illegal. Furthermore, you are stealing someone elses intellectual property. It's ignorant.
Do you go to the store and shoplift c.d.s? It is the same thing.
If you are on a site that you pay to do so, then they aren't spying on you-they don't care.

Most P2P Networks (Limewire, etc.) are safe as long as you don't allow files to be downloaded from you. Meaning, turn uploads off.
Sometimes there will be trackers embedded in the mp3 files. I've only ever seen them come back to someone if they allowed the music to be downloaded off their computer, not if you were the one doing the downloading.

Use one of the legal music download services like iTunes, Napster, Rhapsody or walmart.com to keep the RIAA off your back.

If you are using a per to per network to download your music, then you can't. They can see everything that you have downloaded and everything that is in your "shared" folder.
