The AU consists of several large regional jurisdictions (including ECOWAS, SADC, COMESA, UDEAC), several special multi-jurisdictional territories such as transfrontier wildlife sanctuaries, 53 constitutive states (excluding Morocco), hundreds of kingdoms, as well as a variety of smaller administrative units.

The African Union generally refers to its areas as "Districts" and there are a total of 5 districts:

Eastern District - Addis Ababa
Western District - Timbuctu
Northern District - Tamanrasset
South Eastern District - Antsirabe
Southern District - Pretoria

There are 53 nations. I'm not sure how you define regions but the member nations cover the vast majority of the continent. Some countries contribute more than others and the Headquarters is in Addis Ababa, Ethiopia. I'm sure there's plenty of information on their website if you need to know more about them.
