The oil fields in the middle east were not developed by the time WWII started. Although oil had been discovered as early as 1911, the delay in development was caused by WWII. Commercial development didn't get underway until the 1950's. Hitler's sights were set on the fully developed oil fields of the Caucasias and the Ploesti fields in Rumania.

If he had 20-20 hindsight, he would've given Rommel double his armoured divisions and conquered Egypt and the Middle East; he then would've been able to sustain a major war, but that was not in the cards.

He was planning to capture the Middle East in a two part attack:

1) Attack the British colonial possessions of Egypt and march right into the heart of the Middle East. This failed.

2) Overrun the southern portion of the Soviet Union and seize control of Iranian and Iraqi oil supplies. This was thwarted by the Soviets at Stalingrad.

Hitler did gain control of some oil facilities in Romania, but these were destroyed by Allied bombing.
