I'm a Virgo (I also pay zero attention to these bogus horoscope deals)
and I'm about the least hot headed person you could meet.
I always wonder how people can generalize everyone into these categories that obviously have no scientific merit at all

Some are. Some are not. Ultimately, what month you were born in does not have any impact on how hotheaded you are. DNA, parenting, environment, learning ability, who you hang out with, experience, psychological influences... these things determine whether or not a virgo, or anyone else, is hotheaded or not.

Not at all. Most of them are pretty calm and collected because they don't like to show emotion right away. If they are hot headed it is because they held something in too long in order to figure it out and walk on egg shells for you most likely. I'm a Virgo, but I rarely let anyone get the best of me like that.

Quiet, shy and withdrawn. That's Virgo in general. Of course, depending on the rest of the chart (or whether or not their Mars is square Pluto) they can be very explosive. --- Like my own little self.

i dont think i am a tempermental lunatic....and i am FAR from being withdrawn..hot headed? i can be sometimes..i do get annoyed very easily...

As far as i know most of the virgos are haughty......they think that they are perfect in everything....they do not show this to all...but the persons they know they try to solve their meanings from them.......wellllll this was all what i know about them......this is my experience which i dont think it seems to be wrong.
