Normally I would say "try to save it, put it back in its tank and treat it with an anti-fungal agent to try to avoid infection," but that's more when a fish falls on the carpet. If it fell in a hot frying pan, I suspect it won't make it, but since you probably posted *after* putting it back in the water... watch it? If the pan wasn't too hot, it might be all right? If you have any chlorine treatment like NovAqua or something that advertises it replaces slime coating, add some of that (a lot of the dechlorinator/water conditioners have chemicals like that to lessen fish-stress). If the fish lasts the next couple hours, I'd say go and get some of that anti-fungal medication to help him resist secondary infection on the injury.
... hope he's all right. If he's obviously in a whole lot of pain and you don't think he's going to make it, boiling water with a little Clorox is a swift, painless way to put him to sleep.

that's sad if that was true. if i were you, i would save it. it's still life... put it in a separate tank and just observe. eventually, when the fish can recupirate by himself he'll be fine. also, assess the length and or severity of the damage done. next time be careful..
