I believe it was a German oral folktale collected by Jacob and Wilhelm Grimm, better known as the Grimm Brothers. They collected German fairy tales and compiled them in the early 19th Century.
Logically, that means the origins of the story are not known, but it would make the Brothers Grimm the original authors, since they first wrote it down.

The Brothers Grimm wrote a story about the sisters "Snow White and Rose Red". The disney story Snow white and the Seven Dwarfs was taken from this story.

there are number of versions of the story which appear to date from about the middle ages. The Grimm Brothers included the version we now recognise in their book which was probably of German origin

I would say Walt Disney - but having read the other answers I am not sure now.
Still a classic film though - my Dad and I still rate it as our favourite all time film!
