As far as organs go, the heart and liver. The embryo takes it's shape starting out as (what looks like) a tube. Then it develops arm and leg buds and a liver bulge. The heartbeat can be seen in ultrasounds at about 8 weeks.

One of the very first things to develop is the central nervous system, this includes the spinal cord as well.

the heart is the first to fully form. by 5 weeks its already starting to develop ventricles. the spinal column begins to develop, though doesn't close off until sometime later.

Immediately after fertilization, the sex is determined. From there, the neural tube begins to develop. Everything kind of quickly goes from there.
