This one's a close call for me.
While "GoodFellas" might be the all-time greatest mob movie ever made, "The Godfather" parts I and II are arguably the greatest movies ever made. Both give a realistic portrayal of the Mafia lifestyle. While "GoodFellas" shows you the gritty, bloody and treacherous side of mobster life, "The Godfather" showed you what it looked like to be the top guy... the one who never has to get his hands dirty.
I'm going to have to vote "The Godfather," for no other reason than the fact that Marlon Brando... perhaps the greatest film actor in history... delicately portrays the aging Vito Corleone in the first epic masterpiece.
"Scarface" to me was nothing more than a drug-addled screenplay by Oliver Stone and an overcooked performance by Pacino. Don't get me wrong... he was brilliant in that picture. But the whole head-first-in-the-mound-of-coke thing wore thin on me by the end.

Easy. The Godfather. It's Shakespeare with violence. It's also handsomest picture of the three. A prestige picture.
I have a soft spot for the energy and guts of Goodfellas.
Scarface is exploitative trash. It completely fails in its mission to make you hate Tony Montana. You do realize that you're supposed to loathe the guy, right? The movie was fashioned in a way that somehow glamorizes his lifestyle, to the point where rappers crib from its constantly.

I would have to say Godfather II actually. Its better than the first, if you've read the book.
Goodfellas falls apart towards the end and scarface is, as mentioned before, quite over the top.

Godfather -- I like the epic quality of the first movie (the other two are okay, but the first one is the one I love). I must admit though, it was great during the AFI special to see part of the Scarface scene leading up to "Say hello to my little friend."

Though all good ganster films. Goodfellas actor De Niro and director Scorcesse, Godfather actor Brando and director Coppola, and Scarface (with a remake) actor Pacino and director De Palma. But sorry, Tony Montana, please give way to the legendary Tony Camonte, actor Paul Muni and director Hawks. This World is Theirs and not Yours. I hope I am clear.
!932 classic sets a milestone in gangster films.

THE GODFATHER- greastest movie ever made, not just between these movies,
GOODFELLAS- very good picture, enjoyable, laughs, romance, and the language/violence is just awesome
