Go with the platics. Copper is much more expensive and takes longer with the soldering and the such. Your price should reflect a differance if you decide against copper.

I'm a plumber of 35 years that strongly advocates copper.

But right now, even though it has a 50 year guarantee to homeowners, you can't afford it because of the Chinese and Indian demand for it. It's high priced right now.

Go with Wirsbo (Uponor ) pex tubing.
The fittings are indeed quality.
It's not as popular with the new construction plumbers, because it takes longer to install than Vanguard.

Put a Vanguard pex ell up against a Wirsbo pex ell, and you'll see the difference and instantly demand the Wirsbo.

Wirsbo has a 25 year guarantee, if installed by a certified installer.
Vanguard only has a 10 year guarantee, regardless who installs it.
Need more info, email me.

We went with that new pex for our family.
since it was less expensive. and because it is way more flex able it took the plumber less time to install...which made my husband happy.
plus we really like it.What would be the point of our living in the freezing mountains with all the great water and using copper.lol The Pex will expand to at least 4 times it's size and copper will burst.
I vote for the Pex !
Its hugely more practical

Pex is the way to go. Approved for potable supply as well as hydronic heating systems. Will cost 1/4 to 1/3 copper, will go in in 1/10th the time. Cu is becoming more and more expensive with the Pex, no risk of alloys leaching into your drink, lower risk of Pb in the water.

We did our own research before having plastic tubing going to & from sink, icecube maker, filters, & resevoir for the Reverse Osmosis H2O System. We had this past 7 years without ANY problems. Can bend without permanent kinks, no corrosion, cheap & easy to replace if problem.
