Hormones caused by pregnancy cause the alveoli in the udder to expand and branch out. The alveoli then produce the milk, its all based off of hormonal control.

To ghost: actually its mostly water. Horse milk composition is about .4 percent minerals, 90 percent water, 2.14 percent protein, 1.3 percent fat, and 6.3 percent carbohydrates(sugars).
