What are some easy Enzymes to understand for a research paper?

Doing a short research paper on an enzyme. What is a easy to understand enzyme that I could do?

Try pepsin, trypsin, steapsin, or ptyalin. They're pretty common, long known, and there should be a lot of stuff about them.
