Doing a short research paper on an enzyme. What is a easy to understand enzyme that I could do?

Try pepsin, trypsin, steapsin, or ptyalin. They're pretty common, long known, and there should be a lot of stuff about them.

Another group that might be interesting, since we hear about them alot in drug commercials, are liver function enzymes (LFT's) including:
SGOT or AST
SGPT or ALT
Alkaline Phosphatase
