I don't know how mainstream sufi music is, but I enjoy listening to it from time to time, the best collaboration in my opinion was Nusrat Fateh Ali Khan with Eddie Vedder for the OST Dead Man Walking (http://www.artistdirect.com/nad/store/artist/album/0,,226191,00.html).
In the other categories, I consider the Pakistani rock music scene quite happening. There's Junoon (http://www.junoon.com), Strings (http://www.stringsonline.net), among others.
I also love the music of different countries, and quite enjoyed listening to Deep Forest's Boheme, and Comparsa (again a bit mainstream, but felt I could share these:-)).

The Cliks (they're just starting to hit with a cover of Justin Timberlake's "Oh Yeah.")
The Pipettes. (check out their awesome videos on youtube; album currently only available as an import in the U.S. but I'm sure it will get a domestic release soon.)
