In the line, "I will do anything for love, but I won't do that," the "that" is whatever he said just before that.

For example...

"But I'll never forget the way you feel right now, oh no, no way
And I would do anything for love, but I won't do that, I won't do that...."

The "that" in this particular verse is "forget the way you feel right now."

To summarise, he's explaining that he'd do anything for love but won't cheat on her. She says "...sooner or later you'll be screwin' around" and he says "I won't do that!"

Well, to me, it was the start of Evanescence when Ben hears Amy play that song on the piano, and then they decide to start a band...yay. So this song means something.

Lyrically...wow that's confusing. It's definitely a love song, but you have to wonder, "What is it that he just won't do?" I would think it's something about refusing to let go of the memories and moving on, but gee, I just don't know.
