once you sign the waiver does that meen the judge can do or say whatever he wants and you just have to go with it?

Waivers should explain precisely what you are waiving.

If it doesn't, DO NOT sign it.

There are a couple of possibilities, you could be waiving a jury, or you could be waiving an indictment or reading of charges, or you could be waiving jurisdiction. Don't sign anything you don't understand, EVER, but particularly not in a criminal matter.
