Intriguing question. Gollum's madness originates from his obsession with what he has lost, and although he's pretty creepy he comes across as kind of tragic. Renfeld's insanity is completely macabre but funny in a dark, quirky way. Also, Renfeld's condition is imposed upon him from outside of himself while Gollum's emerges from within. Since Gollum is an instrument of his own madness, but Renfeld is more of an unwitting victim, I want to say Gollum is crazier.

Gollum... he was driven crazy buy his lust for a non living thing. Although I believe that Mr. Renfield was written far better.
