Well in the matrix, you will find fibrinectin, elastin, collagen, proteoglycan, glucosaminoglycan, etc etc
So the combination possible for different concentration of matrix molecules will differ. Also due to the specific requirement on the matrix in the tissue

ie. skin contains lots of elastin hence you get this elastic effect

Blood is a connective tissue, and in this case, the matrix is the fluid. Bone is another type, and the cells exude an unmineralized osteoid, upon which hydroxyapatite (essentialy, calcium phosphate) is laid down to mineralize it. The category connective tissue is kind of a catch-all, and anything that is not considered one of the other 3 types of cell (epithelia, nerve or muscle), is called connective.
