Here's a great site "Snail & Slug: Care, Species, Health and much more..." http://www.petsnails.co.uk/
Feeding + food list don't forget to read about "dangerous foods" on this page too : on the same site above is this page http://www.petsnails.co.uk/care/feeding.html
According to this site, they don't need to be kept in water. New one to me lol. All they need is some humidity + a small dish/bowl of water.
It depends on how long you had this snail. was it moving when you found it ?
"If the snail's body is out of the shell or hanging out far and not moving, it is probably dead. Dead snails also stink really bad. If the snail is a species that has a trapdoor, in its dead state, the trap will be open so a shut trap means the snail is alive. Snails may "play dead" for a few days sometimes."

In the wild, snails eat a variety of different foods, including leafy vegetation, fruits, manure and carrion. They can cause damage to agricultural crops and garden plants, and are therefore often regarded as pests. When kept as pets, snails will eat nearly anything, and snail owners should make sure which diets are appropriate to the species involved.

They will eat lettuce. If your snail is dead, the odor will give it away.
