Most famous: 1. Heroic Polonaise in A Flat Major- Piano solo
2. Military Polonaise in A Major-piano solo
3. Slow movement Funeral March from Piano Sonata no. 1 in B Flat minor

However, my personal favorites are

the Four Scherzos for piano solo

and

the four Ballads for piano solo

If If I had to chose just one, I'd chose the G minor Ballad, a dramatic and gorgeous work, which supposedly could have actually had a story associated with its having been composed, but they are rumors.

They are his best works of a long form nature, even though some of his piano Etudes, like the g flat major from opus ten and the C Sharp minor from that same opus are short brilliant works.

The Best Of Chopin

The C#-minor Etude -- because only Chopin can take the idea of a technical "exercise" and mold something with such a beautiful melody. Why bother with Hanon and Czerny when you can play his Etudes? This piece and all his etudes for that matter were a major catalyst in changing the course of music history in regards to composers writing teaching pieces at a level of "high art."

That's a tough one, but I'd have to say his G minor ballade, his A flat major ballade, and his bacarolle are his most amazing works. These three works are incredibally lucious and poetic compositions. If I had to choose just one I'd go with the G minor ballade. That piece is amazing. When you play it, it really does feel like it tells a story through sound.

In my opinion, the 24 Preludes, which I consider to be one piece since they make one complete round through the circle of 5ths (alternating between major & minor keys), kind of like Bach's Well-Tempered Clavier, which I also consider to be one piece.

So many good ones to choose from, in different forms.
I love the melody of his Nocture in e flat minor (Op. 9 No. 2).
