I can start off and knit away but I don't know how to close off or end the stitch.... Can someone explain to me how?

knit two stitches, pull the first one over the second one so that you only have one loop, continue to the end and tie off the last stitch. Use a crochet hook to weave any excess yarn back through the bound edge.

To cast off, just knit the first two stitches as usual and then pull the first stitch over the second, knit another, pull the first over that and so on until you have cast off all but the one stitch. Cut your yarn about 6 inches and pull that through the last loop to tie off.

here is a cheat for making tiny baby hats. you knit a small rectangle, leave the stitches on the needle, and cut the yarn, leaving a good lenghth. thread a yarn needle with the end of the yarn, and start lacing the yarn through the stitches on the needle, pull tight, lace through the stitches again, sew a seam, and voila, baby hat!
