I am wondering how you feel about American Universities and colleges compared to any other country. It seems so many foreign people want to enter an American University. I mean people from (I know the scope on these places is different) India, France, Africa, China, and many other countries strive to get into American Universities. But do they do the same in other countries like Japan or the UK? Why do you think this is so? I have been in school for a long time taking many different degrees at many different universitys for work. Most of my experience comes from IT and Engineering (and a bit of business) just to give you an idea of my thoughts.

That's too broad a statement. However, American universities, especially the 8 Ivy League ones, are among the best in the world. America is still ahead of the rest of the world in terms of technology and space science, despite warnings that American students are behind other countries. This is statistical: in America everyone must be educated by law. This is why so many people from other countries want to be educated in the USA.

I disagree. There are great universities in many countries (Australia, Canada, India, UK, Russia etc.). But the reason why US universities are preferred by students more than others are as follows:
US universities advertise more, encourage students a lot to come to US to study and show their presence. Also, for college pass-outs, there are a lot of opportunities and the visa regulations help them stay in the US unlike other countries mentioned above.

Generally, the first year of US university is like grade 12 in Canada and grade 10 in Japan.

So, it is easier.

Wouldn't you want to attend an easier school, see the sights (there are so many in the US to visit), and have direct access to the world's biggest economy?

And the US has always been largely dependent on immigrants for most of its technological progress, so why should that trend change?

Sorry mate, US and canadian colleges are well behind other colleges, especially in western europe. Your SAT tests are given to Irish 14yr old and it is not uncommon for them to obtain very high scores.
