Well, as nice hard-n-tender says, it really gets packed on almost every island! Samos is not that bad as it is a big island, people scatter around and it doesn't feel so packed!
Very beautiful too and lots of things to do! Forget about all the popular islands!

Thassos in the northern Aegean. There's no airport, thank goodness, which keeps a lot of the hoi polloi away! Nearest airport Kavala, (a chance to see this unique harbour town too) and then it's a short ferry boat trip and bus or rent-a-car after that. Look it up on Thomson travel site for photos and comments. Lovely beaches, mountains, greenery. Best late August , early September, when most of the Greek holiday makers have gone home. You can find all kinds of accommodation from smart hotels to little pensions. There are mountain villages, as well as small seaside resorts. The sea is always clear and the beaches clean, and the food great...just go where you see Greeks eating, not foreign tourists.

Sifnos is wonderful, you can also combine it with Milos, where there are some great beaches. Don't stay in the port in either of the 2 islands I mentioned.
