I chose Chimchar as my starter. I just beat Cyrus and caught Dialga (and now Uxie and Azelf). I think I've made a few mistakes, such as letting Infernape evolve right away instead of waiting for Flamethrower. I've also spread XP around way too much switching pokemon in and out of my team, trying to keep 6 all the time. I should add that I played Red/Blue, not that extensively, but enough to know general info about EVs. Otherwise I'm basically a noob, especially when it comes to advanced team building.

My main team is all around 45-50: Infernape, Staraptor, Gastrodon and Luxray. I could add Lucario, Dialga, etc. I've not used a single TM, my Master Ball, any rare candies etc.

So, is it worth starting over now before I get more involved with the game? Or am I just freaking out about nothing? Since Piplup seems to be the consensus best choice of starter, if I did start over is that the pokemon I should choose? All helpful advice will be much appreciated.

If it really bothers you, go ahead. However, I dont think you should. The best thing to do before worrying about EV training is to get through the Elite Four first. It is very difficult to EV while going through the game the first time. Piplup is a very good starter, especially in this game. I am actually impressed by those who manage to get through the game with Chimchar. It seems like the gym leaders are all placed to give Chimchar a really tough time. at 45-50 after getting Dialga, you are in really good shape, and may not have a whole lot of trouble defeating the E4 when you get to them. And if im not mistaken, Infernape will learn flamethrower later anyway?

If you are worried about getting a Piplup, my advice is to trade online with people. There are plenty of people on gamefaqs.com who have starters up for trade.

Oh and by the way, for some reason this game has very few fire pokemon (ponyta and.....i dunno). If you need a water pokemon I suggest just trying to catch one and then sub in Piplup when you get one.

I say dont start over.

I don't think is enough reasoning to start over your game because your Infernape doesn't know Flamethrower.
I chose chimchar as my starter just because it offers a better degree of difficulty at the beginning. You can always breed another chimchar with a better move pool and get flamethrower in there.
As of right now, I don't think I would have beaten the elite four without my Infernape.

I don't see any point in starting over. Of course this is coming from an oddball water trainer. I'm amazed you got so far with chimchar! I could never put up with it, they really had it out for the fire types this time. Anyway, if you do start over, from my biased water-loving opinion, choose piplup! Plus its really easy to beat all the gyms and your rival because piplup is part steal by the time its emporleon and it can learn flying moves like peck to take down turtwig. I blazed through all the gyms on my first try with piplup...of course that might be because I'm a veteran...anyway, I don't see any reason to start over.

i think you should start over but save your infernape by giving it to someone then have them give it back that way you could just work on infernape and piplup when your fighting other trainers if they have a grass type and they knock piplup out you can count on infernape.................youcould always wait til you have a national dex then catch ditto and breed infernape and ditto to get a chimchar
