I thought no number can exceed pass 100%, whats wrong with that?

Like 3000% is like 3000/10000?

A percentage is meaningless unless the base - the percentage of what - is given or can be determined. If the percentage is of an absolute maximum, then 110% of this maximum is indeed a contradiction. If it were possible to give 110% of this maximum, then it is not in fact an absolute maximum that is being specified.

Nevertheless, in many contexts, the base is such that it is possible to have a percentage greater than 100%, such as the return on an investment or a profit. It is also possible, even common, to have a percentage greater than 100% of an average or a rated output.

Giving "110%" is now a standard business cliché, such as thinking "outside the box." Whether calling for "110%" effort is wise or even possible again depends a lot on what the base on which the 110% is figured.

an example, some jet aircraft use 110% of engine power during take off.

however this is really a question of defining 100%

if 100% is the speed at which an engine self destructs, then obviously the engine cannot be operated above that. In the case of jet engines, 100% is the cruising speed, so 110% would be logical and possible.

"giving 110%" is generally just an expression of exceptional effort.

No one can actually give 110% effort. 100% is all they have and they can't go above that.

However, if I gave $100 to charity last year and I decide that I will give 110% of my last year's gift this year, that means I will donate $110 this year.

Since % means "hundredths",
3000% = 3000/100 = 30 times as much

200% = 200/100 = 2 times as much

Your example reduces to 30%. Your instinct is right; it is not possible in reality to exceed 100%, unless metaphorically. You can of course calculate beyond 100% to any extent you please: ie, 100% = x and 500% = 5x.

You are correct. Nothing can really go more than 100%. What the saying means is that you need to give it your best effort. (Or actually better than your best effort.)
