This may or may not be specific to only Jewish burial customs, but I wonder why some cover the eyes and mouth of the Jewish deceased, at burial? PLEASE! ONLY SERIOUS answers! Please and thank you!

I don't know where you heard that- but it is most defintely NOT a Jewish practice to cover the eyes and mouth with clay.

After death the body is cleaned and purified (Tahara), wrapped in a burial shroud and buried (outside of Israel we put the enshrouded body into a pine coffin, in Israel no coffin.) No makeup is on the body, no clothes, no dirt- and definitely no clay!
