sounds like your horse secretly wants to be a piggie....... LOL
I think he's 'species confused'

You can't stop him. Horses just naturally gravitate towards dirt. :)

The best you can do is walk him around or keep him tied up until his coat is completely dry, then spray him with a product like Show Sheen that will deflect some of the dirt.

Thats a tough one,
I had a horse that did that once and after about $2,000 in vet consultations and tests it turned out to be a certian grain lacking in his diet.

dont think you can do much about it. seems to be the more white they have the more they gravitate towards filth. also applies the closer to show day it is. i just brush mine everyday and they stay pretty clean.
