We are going to vacation in Orlando with two kids (1 & 3 yrs), and 6 adults. WE have about 10 days. What do you suggest we do there? Which parks & sightseeing?

With children that young, stay with the disney parks. The other parks down there are more set up for older children. Epcot is nice to go for sightseeing more than rides. There aren't that many there. The main Disney park and Animal Kingdom are your best bets. Just leave plently of time for naps and have snacks and drinks for the long lines. Bring LOTS of sunscreen and a water bottle with a fan (mister) on it is a godsend. I would visit a park for a day or two, then schedule a down day in between to rest up (especially if you have some older adults/grandparents with you).

The biggest theme parks were pretty much already mentioned, but there's also Fun Spot (more like a county fair than a theme park) and Wet and Wild (a nice water park) ,Gatorland in Kissimmee, or for free sightseeing you could go to Citywalk at Universal or Downtown Disney (also known as Pleasure Island).

will lets see you have Disney world, and the theme park from universal theaters. that should take up some time.
