You don't say where you live, so I'll give you a pretty general answer.
The best theme parks generally cluster around certain areas in the South, including Florida, Texas and Southern California. Also Georgia and some midwestern areas around Chicago and St. Louis and that general area.
Since I know the Texas parks better than the others and since Texas is accessible to much of the U.S. I can recommend any of the Six Flags parks in Texas--Arlington, Fiesta Texas, as well as Seaworld San Antonio. Texas also has the Schlitterbahn water parks, which include the original park at New Braunfels, and newer parks at Galveston Island and South Padre Island.
San Antonio also has a water park called Splashtown which is very reasonably priced but tends to get pretty crowded in the summer time.
Most theme parks, especially in the South, now have water parks.
Seaworld has parks in San Diego, San Antonio and Orlando, and operator Busch Entertainment has several other parks including Busch Gardens.
If you enjoy thrill rides any Six Flags park will do nicely, but check out the Seaworld and Universal parks as well. Disney parks, of course, are among the world's leading theme/amusement parks.
Depending on where you live you might want to check out season passes or vacation packages. Most theme/amusement parks offer season tickets or multiple visit packages and they can be a bargain if you want to come back again and again.

Seaworld is a great place to go in the summer. It has water rides and regular rides. But most of the rides have water. Another great place for the kids is Legoland. I'm going tommorow and I can't wait. I think I have more fun there than my kids. There is something for everyone in the family. Both of the places are in San Diego. So book your trip now!!!
