Ahh.... so many !! But here's one which you probably won't get recommended to you:
"Watermelon in Easter Hay" by Frank Zappa.

It's from the Joe's Garage album. It's an instrumental track, and is very very simple (except for the time signature, which is pretty odd, even though it sounds very straight).

The tone of the guitar on this track is breathtaking. Clean as a bell, kinda like the Strat sound made famous by The Shadows..... just a classic warm Strat sound.

It's the melody that really grabs at my heart strings. Again, it's a relatively simple lead line, but the emotion and attack really speaks to me. I guess it's one of those tracks, you either love it or you don't, but definitely give it a listen if you can find it somewhere.

Also, I would recommend listening to lots of Pink Floyd. David Gilmour is an absolute genius, and can say more with a handful of notes than most guitarists can say with the entire fretboard.

Another guitarist worth a mention is Steve Rothery from UK band Marillion. Many of his solos are truly beautiful, and ALWAYS compliment the musical arrangement perfectly, even when working in complete counterpoint to them.

no question about it!!! eagles - hotel california. at one point, there's no less than 8 guitars in symphony. i can never get enough of that song. even the acoustic version kicks some serious a**.
