Because humans are dangerous and kill animals. It is very basic self-preservation for them to fear humans and run from them.

Because they need to. Animals are predators or prey. Predators need to run to catch their prey to survive. And the hunted animals need to run in order to survive. But not all animals run faster than the human. Some animals desvolted other hunting and defencive techniques. But they don't have anything to do with your question so I won't explain.
