hi, Roasted coffee beans get their best flavor and fragrant properties from the oils interior the beans. After roasting, those oils will come to the exterior and evaporate taking the flavour and aroma with it. the fewer floor section uncovered to air, the longer it takes for the flavour to flow to pot and to get a clean cup of coffee.
