Just completed a web design course. My favorite book we used was Adobe Photoshop CS2 on Demand by Andy Anderson, Steve Johnson, and Perspection, Inc. (Que publishing). There are now CS3 versions if you need that.
The "On Demand" series was great. Simple, to the point instructions with screenshots, which helped me learn a lot about the program, which I had never used prior to this course. The "On Demand" series is available for several Adobe products.
My best recommendation to you though, is if you have options in the books you use, OR if you are buying books beyond the class requirements, is to go to the bookstore and spend some time looking through them. People have varying preferences in the kind of books they like. I like books that get down to the point with lots of illustrations/screenshots, and don't require endless reading. Other people like extremely comprehensive books. Pick a topic (something very specific) and try looking it up in each book. If the explanation makes sense to you, and you enjoy reading it, it will likely be a good book for you.
