Are you sure they were fresh? And did you use a regular scare-crow or one dressed like a cop? There are definite tricks to this; it's not for beginners.

If you water them with sugar water they will grow sweeter and more plump.
You also want to make sure the sun doesn't over-bake them, i hate when that happens, ugh. And Dew is a whole other problem.
The middles won't be relevant at first, they need time to sink back to make the holes--thats when you know they are ripe.

Did you remember to water them with hot cooking oil? If you haven't, then do so and it should take them a month at least, depending on the variety. Those cream filled and jelly filled ones take a little longer to grow.

They're usually harvested in late July, early August. Be sure to keep the insects off of them.

about 3 more months...water them 3 times a day and use skim milk one time a day...good luck
