The maze is life, or the world. The cheese is your goal, place in the world.

The maze is your routine and the cheese is your prize or activity or destination.

For example, the cheese is the store. The maze is the streets of your town. One day, you come across some road construction. Your maze has changed. Will you be able to find the store even if it's in the same spot?

Or, lets say you've always just had to get by at work. Your new boss raises the bar, so when you do what you have to to "just get by" and ask, "Ok, where's my paycheck?" your boss says, "Nuh uh, you have to do XYZ more." That's "moving your cheese." Someone moved the level of achievement you need to reach. Now you have to find your way through the maze again, this time using your brain, not autopilot.
