If you want a dinner-type thing, do a Yahoo search for copycat recipes, like Red Lobster's Cheddar Biscuits. I made them & it's a hit, even my Husband loves them & he's allergic to garlic.*S*

Or...copycat Orange Julius. For each guest, use a cup of orange juice, half a cup of milk, and 6-8 large ice cubes. Optional is a teaspoon of coconut powder. Blend well and serve. You can make it the day before and freeze so it's portable the next day. You can sub orange drink powder or any other flavor, too.

Or...if there's a place to keep things cold--for a summer gathering you can't beat sherbert punch! Pour into a punch bowl a couple of bottles of 7-Up, Sprite, or the like, and add rainbow sherbert. Or strawberry soda and vanilla ice cream(or frozen yogurt). Or experiment if you have time & money. For a fizzier drink, add the soda last. Add the ice cream to the soda for a frothier, smoother drink.

Chocolate Truffles!

12-16 ounces chocolate(A Hershey's bar will do just fine)
1/2 cup heavy whipping cream
1/2 cup half and half
1 teaspoon vanilla

melt the chocolate in a double boiler(make your own by filling a pot half full with water, then setting a smaller pot or metal bowl into it to place the chocolate in), stirring often so the chocolate doesn't scorch.

When the chocolate's completely melted, slowly add the liquid ingredients. Stir until the mixture is thick and shiny, then remove from heat. It's best to pour into a plastic bowl next so setting time is shortened. Let set for half an hour, or place in the fridge for about 5 minutes(NO LONGER THAN THAT!!), until the chocolate's firm, NOT hard. Then use a teaspoon or a melon baller to scoop out chocolate. With clean, dry hands(using plastic gloves is best), quickly roll into balls and place on wax paper. Once done, you can serve as-is, or roll balls in cocoa powder, powdered sugar, melted and colored chocolate or candy melts, or whatever suits your fancy. You can also omit the vanilla and add a teaspoon up to a tablespoon of your favorite flavoring, or liquor if you just want to serve the adults.

I know the instructions seem a bit much, but trust me, it's quick, easy, EVERYone will enjoy them, and at least most of the people there will be simply amazed that you "went through SO much trouble!"

I LOVE making candy, and have lists of supplies, recipes, and suppliers for things that look like you went through heck to make them, but are really easy to make and have an elegant, classy touch without all the work. Make a macaroni and cheese casserole!! I used to love going to our family reunion in the mountains with all the sweet people. They used to always be sure to have 3 or 4 different kinds of M&C for me.

I miss those days so bad.

Try this:

5 Cans of French Style Green Beans, drained
1 1/2 to 2 blocks of softened cream cheese (soften in microwave)
2 cups shredded cheddar cheese
2 large cans French's Fried Onions

Drain Green Beans and place in rectangle baking pan (you can use the disposable aluminum ones). Gently mix in cream cheese and mix in 1 cup shredded cheese. Add remainder of shredded cheese to the top of the dish. Bake at 375 for 30 min. or until cheese on top is bubbling. Turn oven to low and add French's Fried Onions and cook for 3-5 min (keep an eye on these...they burn easy). Take out when golden brown and that's it. This is a favorite recipe and is raved about anywhere I bring it...it will be gone before you get any!
