The shuttles and space stations are equipped with special "suction toilets" that hold them down to the seat. The shuttles and stations are equipped with storage facilities for the waste. I am not sure if they release it into space. They might with the urine, but I am not sure.

Astronauts use wet cloths to wash in space. They use soaps that do not need to be rinsed off. As for urinating and such, there are toilets that they use that they need to be strapped in place to use, so as the air flow can do its business. Water waste is vented into space and solid wastes are simply stored until they arrive to Earth.

They connect a catheter to their thingies and pee . For 'sitting', they have a little vacuum toilet on the shuttle, but in the Apollo moon landing days, they had to squat down in the lower equipment bay of the command module just out of sight of the other astronauts and do it in plastic bags.(Eyilk!).
