A Witch is someone who practices witchcraft to help better the world and mankind. A witch is NOT someone who is ugly, worships the devil, or hurts people
Witch is a name given to someone who works with magical powers and natural substances and uses them to help and heal. Magic can be used for both good and evil, but is generally used solely for the good.

Witchcraft is a technique in much the same way that prayer is a technique, and generally involves the use of sympathetic correspondences and the direction of energy through personal will in order to cause change in the universe.
You don't "know" you are a witch any more than you "know" you are a piano player. You become a witch by practicing witchcraft, which some people may have more of a talent for (and interest in) than others.
EDITED TO ADD: To Jill... I think you're confusing witchcraft with Wicca, which is one of the religions that practices witchcraft. They are the ones with a Goddess/God belief and the sabbats. Wicca and witchcraft are NOT necessarily the same thing, although most Wiccans are practicing witches.

I think you will find there are a lot of people here who know what Witchcraft is. If you are looking for a good primer book to read on the subject I would suggest Drawing Down the Moon by Margot Adler. As for how would you know if you are one, well that you will have to see for yourself :)
