The graduate program I would like to apply to requires you to have a faculty sponsor before applying. What is the best way to approach faculty members with interesting research in order to find out if they will be able to take you on as a graduate student? I was thinking of emailing them my CV and research interests, but other than that I am at a loss.

That sounds like a good start, but I think it might help to send them a letter rather than an email. Also, I would recommend that you explain why you would like to work with this person - does his research interest you? Have you spoken to former students of hers? Why did you pick that particular sponsor? Good luck!

If you use email use it to make a face to face appointment. Think of it as a job interview. Dress nice but not too formal. If you have a proposal written out take it with you. Make sure it looks professional. Think of all the questions that the professor might ask, rehearse the answers.
