I fold it in half length wise then tuck the corners into each other (the bottom two will be wrong side out). Fold in the sides and then fold in half again. Turn and fold in half the other way.

I jam my fist into one corner, then reach for the next corner down the longer side, and fit it over the one already on my fist. Then I do the same for the other two corners, and finally put them all on one fist. It will never lie completely flat, but it's not meant to.

grasp the corners of one side of the elastic sides and bring them even with the other (long) side and take all elasticised edges together while grasping the flat edges and fold them together
