The original wainscotting was actually thicker individual boards tongue and grooved together. they were installed over the wall studs and then the lathe and plaster applied to the upper portion of the wall and a chair rail added to hide the seam between the two.
Now we have the 1/4 inch sheets of beadboard we can buy and have to install over the drywall, but the look is still very traditional. The sheets are just much cheaper and easier to apply.

Basically, yes. You can buy beadboard paneling in full size sheets. Then cut them to the height you want for your wainscotting.

I've been in the trade for 30 yrs and have done from the beginning.
I remember when i was a kid we had some in our house and my grandfather house when he built it
so it goes a longggggggggggg way back lol lol
most where put up to protect walls from chairs hitting the wall

i don't know is it traditional style or not, but i can recommend you some sites for wainscoting, they are really very useful
