Like some people beleive in Santa Clause and some people don't.

Depends on how/where they were brought up. Some cultures will teach about certain things (like santa) and others diregard it and teach about other things.

The actual definition of belief is holding something true with out factual proof. Some people just can't believe in something with out proof. So beliefs are totally up to the individual and don't have to be something like religion where more than one person believes

Because everybody's different. Everybody sees the world differently. Everybody needs something different to believe in. You could ask why some people believe in Allah, some believe in God, and some believe in like Zeus or the other various gods, its 'cause everybody believes in these things to fill a different spot in their life. Its just part of the amazing thing that makes people individuals.

The religious answer is that "if God has so willed, He would have made the humankind follow one Path, but He did not." How and why do we humans try to convince 'the others' to our way of thinking and believing and insist on it.

That would be because everyone makes their own decisions on what to believe. Everything affects different people differently, so it doesn't make sense to expect everyone to think the same way on everything.
