Gemcutting is a profession unto itself. If you can't find one in the yellow pages (But, for example, I found that there is a Gem Cutters' Guild in my hometown of Baltimore.), I'd suggest contacting a reputable local jeweler or insurer to inquire.

Go to a reputable jeweller - he/she will either be able to do it or they will know someone who can do it.
