Firstly it depends on the kind of mold. The mold on Fruit and bread might be yucky, but it probably won't kill you. In fact it is from this mold that antibiotics were discovered which cure many of our diseases by killing bacteria but not harming us! The white stuff coating Camembert cheese, and the blue veins in blue cheese are also actually a variety of mold, but one that is cultivated for the flavour it adds (Although I confess, this can be an acquired taste). The main reason why some foods are fine for animals and not humans has to do with the environment in which the individual species evolved via natural selection. some plant species die in the presence of oxygen, which we need to breath is one example of this. That chocolate is a toxic poison to cats and dogs but yummy for us is another.

Animals have a tougher digestive system than people because they are frequently eating things that people would not be used to eating.
But it's not good that you're feeding them moldy food. Just because they're coming back (which it may be different birds anyway) doesn't mean you're not making the sick. Mold is definitely not good for birds.

There are thousands of different kinds of mold, and as someone already pointed out, many cheeses have varieties of mold in them, each one giving that cheese a distinctive flavor.
Some mold is toxic, yes. Some people can find themselves allergic to some molds, as well, which can prove problematic to the point of possibly causing life threatening reactions.
Think of it like this, there are poisonous snakes, but not all snakes are poisonous.

The kind of mold that grows on stale bread is, as Graham said, not harmful to humans. It is apparently harmless to birds and squirrels, which I suspect you are feeding stale bread.
The blue streaks in Roquefort (or blue) cheese are fungi, not mold.
So we have bacteria, fungi and mold that we can eat without having any problems. I can even eat my wife's cooking without any problem! It helps that she is a very good cook.

We have a different digestive system that can't take in great amounts of mold; however, other animals eat it and are fine.

The digestive system of each creature is different, plus their nutritional needs are different for example Cows can digest cellulose while humans can't as cows has an enzyme that we don't how. so for a cow the cellulose of grass is very nutritios but for you it will pass un changed or can block your gut
