why a visible condensation forms when a can of soda is opened?

It is not really condensation. It is just saturated Carbon Dioxide gas with entrained liquid exiting the can due to higher pressure in the can than in the surrounding atmosphere.
Here in Denver where our atmospheric pressure is only 12.2 psi, we can really get sprayed if the can was sealed or bottled at sea level where the pressure is 14.7psi.
