I saw this when I was a kid so it has to be late 70's to early 80's. I remember these soldiers are doing some training in the backwoods/swamplands. I think it's training because I remember they're armed with guns but only carry blank bullets.

Anyway, one jackass soldier jokingly fires a blank at a local and all hell breaks loose. Soon the locals are hunting and killing the soldiers and it all culminates at this "Oktoberfest" type festival in a small town.

I vividely remember the slaughter of a pig in the movie as well. Any help with a title would be greatly appreciated.

...you're talking about the 1981 suspenseful actioner, "Southern Comfort", starring Powers Boothe, Keith Carradine, Fred Ward and Sonny Landham; sorta plays out similiarly to the film, "Deliverance", but with 'hoo-rah' weekend warrior jarheads.

Director Walter Hill ("The Warriors") would work with Powers Boothe, seven years later, in a much more contemporary film, entitled "Extreme Prejudice", starring Nick Nolte; actor Sonny Landham, a regular in director Hill's films, would work a year later, on Hill's "48 HRS", alongside Nick Nolte and Eddie Murphy...

It is Southern Comfort with Powers Booth. Great film.
