It gives the feeling of being "in the kitchen" while you're dining. You're supposed to feel, in these restaurants, like your Italian grandma or someone is making you the food in her own kitchen. It's just a way of creating ambience.
Sometimes you see some fire, so it's kind of "exciting".
I don't think it's terribly "unfair" to the kitchen- they choose to work in that place, so that's their decision. Also, it gives them the feeling of being included in the rest of the restaurant. It seems like being in a crowded, stuffy kitchen in the back might get a little boring. Having an open kitchen keeps them in the scene and in the action.

Its a hospitality thing, a show of confidence. The kitchen should be able to be run, so efficiently that the chef can be on show, along with other staff that may work alongside him. An open kitchen is generally in restaurants - a sign of a good restaurant. It means the chef knows what he is doing, and does not need to hide.

The things that goes on in some kitchens good people really don't want to see. Therefore, a visible kitchen where you get a chance to see what is going on, and the cooks and staff appear to be above board and safe, is alright with me any time of the day. Sorry, but I love knowing that my steak or bagel didn't hit the floor then land on my plate and is on its way to my table.

That is EXACTLY why the kitchen staff is on display.
At Bisuteki Restaurant in MA, the chefs slice, dice and prepare/cook the food right at your table. It's definitely a show.

yeah i guess its so they can show the guests how clean the kitchen is. I dont think it would bother the kitchen staff, they are probably used to it. And i must say, that i do feel better when i can see them actually making my food lol.

maybe to give a total dining experience to the diners...whatever that means, lol. well at least you can see them cooking it fresh and hot...and that they're not drooling over your order...eeewww.

well, I'm a waitress and I'm not invisible. everyone sees everything I'm doing when i work. besides wouldn't you rather be able to see what they are doing with the food you will be eating!
